Ingredients:

  • 1 scallion, thinly sliced
  • 4 oz. crumbled goat cheese
  • 4 oz. plain whole-milk Greek yogurt
  • 3 tsp. extra-virgin olive oil, divided
  • Kosher salt
  • Freshly ground black pepper
  • 4 cups loosely packed arugula
  • 1/2 cup coarsely chopped fresh dill
  • 1 tsp. fresh lemon juice
  • 4 store-bought or homemade lavash
  • 1/2 lb. sliced deli turkey, divided
  • 4 roasted red peppers, cut into thin strips (about 1 cup), divided
  • 4 Persian (or 2 English) cucumbers, cut lengthwise into quarters, divided

Directions:

  1. Prepare the Goat Cheese Spread:
    In a medium bowl, combine scallion, goat cheese, yogurt, and 2 teaspoons of olive oil. Season with salt and pepper to taste.
  2. Prepare the Arugula Salad:
    In a large bowl, gently toss arugula, dill, lemon juice, and the remaining 1 teaspoon of olive oil until well combined.
  3. Assemble the Wraps:
    On a work surface, lay out each lavash. Spread a layer of the goat cheese mixture evenly over each lavash, leaving a 1-inch border around the edges. Evenly distribute the sliced turkey, roasted red peppers, cucumbers, and arugula salad over the goat cheese spread.
  4. Wrap and Serve:
    Fold one half of the lavash over the filling like a burrito, then tightly roll it up to enclose the filling. Tuck in the ends to seal. Cut each wrap in half before serving.
