Turkey Lavash Wrap

Ingredients:
- 1 scallion, thinly sliced
- 4 oz. crumbled goat cheese
- 4 oz. plain whole-milk Greek yogurt
- 3 tsp. extra-virgin olive oil, divided
- Kosher salt
- Freshly ground black pepper
- 4 cups loosely packed arugula
- 1/2 cup coarsely chopped fresh dill
- 1 tsp. fresh lemon juice
- 4 store-bought or homemade lavash
- 1/2 lb. sliced deli turkey, divided
- 4 roasted red peppers, cut into thin strips (about 1 cup), divided
- 4 Persian (or 2 English) cucumbers, cut lengthwise into quarters, divided
Directions:
- Prepare the Goat Cheese Spread:
In a medium bowl, combine scallion, goat cheese, yogurt, and 2 teaspoons of olive oil. Season with salt and pepper to taste. - Prepare the Arugula Salad:
In a large bowl, gently toss arugula, dill, lemon juice, and the remaining 1 teaspoon of olive oil until well combined. - Assemble the Wraps:
On a work surface, lay out each lavash. Spread a layer of the goat cheese mixture evenly over each lavash, leaving a 1-inch border around the edges. Evenly distribute the sliced turkey, roasted red peppers, cucumbers, and arugula salad over the goat cheese spread. - Wrap and Serve:
Fold one half of the lavash over the filling like a burrito, then tightly roll it up to enclose the filling. Tuck in the ends to seal. Cut each wrap in half before serving.
